Ingredients
3-4 sprigs fresh cilantro
3-4 sprigs fresh parsley
¾ cup diced onions
½ cup roasted red peppers
1 tsp celery salt
½ tsp cumin
¼ cup tahini
1 tb fresh lemon juice
2 tsp white balsamic vinegar
2 tsp Dijon mustard
1 tsp liquid soy or tamari sauce
3 cups cooked drained Black eye Peas.
Directions: Place cilantro, parsley and onion in food processor; pulse until coarsely chopped. Add remaining ingredients and blend until smooth. Serve with toasted pita bread or cut up spelt bread or spelt wrap and toast.
